The only problem with that is that you're either going to have to stretch the image to a really unrealistic ratio, or cut off a large portion on both sides of the screens since both screens are as wide as they can be in that aspect without bleeding off of the screen.
Good news is that there's a screen option that allows you to blow up one screen or the other and you can map "switch screen" to a button - so if most of the important gameplay is done on one screen or the other, you can use that one and get pretty decent use out of your screen real estate.
